A wild guess about how fast something is going, usually made when someone is too wasted or excited to care about the truth.
"That car was going mach chicken!", said by a kid who just got hit by a truck.
"I ran mach chicken to the store!", said by someone who tripped on a shoelace.
"The chicken flew mach chicken!", said by a chicken who was hit by a chicken.
